Hey, how do I let vista backup 'backup' specific folders that have my photoshop, illustrator and premiere files? When I use the wizard I only see options I can tick, but no way to specify folders to ensure they are being grabbed as well.

Welcome to the "world-according-to-MS", in which THEY get to choose the options available to you! In other words, you can't. Vista backup provides no capabilities for specifying which files you want to back up (by name), only the types of files.

The quickest and easiest way to do what you want (without purchasing a backup product), it just to connect a hard drive (or USB stick -- they come in 32GB sizes now!) to your machine and copy the files onto that.
